Well It’s the end of July and the temps are increasing. Here in Upstate, NY the temps are record highs this week. Many are either swimming, or catching up on great TV shows in central air. Dinners are usually not elaborate on these days. Who wants to cook? Here is a list of some cool meals for hot days.

Summer salads are very popular and trimming on the waistline. Easy to make and minimal time in the kitchen. Add fresh vegetables to a fresh bowl of greens. And of course any of your favorite proteins. Ham or turkey for a chef salad, or marinated chicken. Throw on some feta for a Greek salad ,or egg and bacon for a Cobb salad. Pair with your favorite dressing for a delicious filling meal that you don’t have to sweat over the stove for.

If salad isn’t your favorite and you want more of a hearty meal go for a submarine sandwich. Load it with your favorite fixings for a simple meal on a day with 100 degree temperatures.  Wheat, Rye White, or flatbread with any meat you like! Serve with your favorite chips and a pickle.

A summer favorite, Grilling! Grab a juicy steak or some fresh hamburgers and grill outside. No need to heat up the kitchen. Besides protein, go for some fresh grilled vegetables. Corn husks wrapped in tin foil and placed on the grill taste divine. Go for the gold and grill up some shrimp kabobs or fresh lobster tail. Now that’s a meal!

Maybe your real tired and hot and just feel like a quick dish with no preparation or cooking. I learned about this dish from previous experience at local diners. It’s called the fruit platter. Pair your favorite fruit with a scoop of cottage cheese and tuna salad,egg salad,or chicken salad. There is no wrong combination. Quick and delicious.
